Baby Back Pork Ribs

Grilling is one of the best parts about the Fourth of July. Grills everywhere will be under attack from chicken, burgers, steaks and ribs. One of my favorite meats for the Fourth is ribs. Pork baby back ribs to be exact. I prepare mine a different way than a lot of people. I prefer to cook them in the oven, until almost done. Then finish them off on the grill, to form a nice crust.

Season ribs liberally with salt and pepper

Preheat the oven to 350F. Place the ribs on a broiler pan, bone side down. Season liberally with salt and pepper. (I cut the racks in half so they would fit better on the pan, but not necessary).

Bake in the oven for 1 hr 15 min. If you have a sauce or glaze you like, brush it on before and once during the baking process. I used a regular store bought ginger-terriyaki glaze.

Out of the oven, ready for the grill

Get the grill fired up. Gas or charcoal, doesn't matter, as long as it's on and hot. Take the ribs out of the oven and place them on the grill, rib side up. This will allow the meat to get a nice crust on them. Be sure to keep an eye on them, because you don't want the outside burnt. Again, if you have a glaze you like, brush it on just before placing them on the grill.

Once nice and crusted on the outside, take them in and dive in!
