Ratatouille

 

As a thank you to Brent & Rosa, I made them dinner in my new apartment. We all like the Disney movie Ratatouille, so fittingly, that's what I made for them. As stated in the movie, it started as a peasant's dish, but can be jazzed up a bit, as they did. In the movie, Remy used a mandoline or v-slicer to slice all the veggies paper thin. This makes for great presentation, but it limits the types of vegetables one can use, because of the desired uniformity. For mine, I just medium/large diced the vegetables and left the cherry tomatoes whole.

1/3 cup olive oil

3 garlic cloves, minced

1 sm/med size eggplant - medium dice

1 zucchini - medium dice

1 onion - medium dice

1 each - yellow, green pepper - both medium dice

1 lb - cherry tomatoes

1/4 tsp - thyme leaves

1/4 tsp - ground coriander

1/4 tsp - ground tarragon

1/4 tsp - fennel seed

1 - bay leaf

1/4 tsp - oregano

1. Add the olive oil, garlic, thyme, coriander, tarragon, fennel seed, bay leaf, and oregano to a pot over medium heat. Stir until it becomes fragrant.

2. Add the vegetables, a couple pinches of salt and pepper and stir. Keep an eye on it for about 8-10 minutes, until the vegetables are cooked through.

3. To create a bit of a sauce, crush a few of the whole cherry tomatoes.

Serve with some freshly made garlic bread.

1. Turn on the broiler in the oven.

2. Cut a French loaf on a bias.

3. Lay out the slices on a cookie sheet.

4. Butter the bread and put under the broiler. Don't turn your back - it'll toast pretty quick.

5. When the bread is toasted to your liking, remove from the oven.

6. Take a garlic clove and rub it a couple times on each slice of bread.
