
This is a great soup that is especially good during the summer. It can be made very simply, with a blender as the main piece of equipment.
2 avocados - halved and pitted (ripe avocados should "give a little bit" when squeezed)
2 cups of vegetable broth
1 teaspoon of salt
Several grinds of black pepper
Juice of half a lime
In a blender, add the avocado halves and the vegetable broth, salt, pepper, lime juice.
Pulse (with the lid on, of course) until the mixture becomes smooth.
Season to taste - more of salt, pepper, lime juice - if needed.
The consistency will vary, depending on your preference. For a thinner consistency, add a little more vegetable broth. For a thicker consistency, add another avocado half and blend.
I garnish them with a dollop of sour cream and some diced sun dried tomatoes.
